Black Bean and rice Taco skillet

Ingredients:
1-2 lbs ground beef
1 can drained black beans
1 cup jasmine rice
1 small  diced onion
1 diced bell pepper
3 tbsp minced garlic
2 tsp oregano
2 tsp cumin

1/2 tsp allspice
1 tsp cayenne pepper 
1/4 cup tomato paste
2 cups water
1 bay leaf
1 cup mozzarella cheese
salt & pepper to taste

For serving:
Avocados 
Limes
Cilantro

Directions:
1. Preheat oven to 425 F
2. Brown ground beef in skillet with onions, garlic, and bell peppers. 
3. Add all spices and continue to stir until no longer pink. Drain fat if desired. 
4. Push meat to side  of pan and add rice to the open side of the skillet. 
5. Stir rice, toasting for 1-2 minutes.
6. Mix everything together. 
7. Add tomato paste and 2 cups of water, stirring well and bringing to boil.
8. Top with bay leaf. 
9. Reduce heat to low, cover, and simmer for about 10-15 minutes. 
10. Remove the lid and bay leaf and turn off the heat. 
11. Stir in the black beans. 
12. Top with cheese and bake in oven for about 10 minutes or until golden. 
13. Top with desired toppings and enjoy!
