Black Bean and rice Taco skillet

Ingredients:
1-2 lbs ground beef
1 can drained black beans
1 cup jasmine rice
1 small  diced onion
1 diced bell pepper
3 tbsp minced garlic
2 tsp oregano
2 tsp cumin

1/2 tsp allspice
1 tsp cayenne pepper 
1/4 cup tomato paste
2 cups water
1 bay leaf
1 cup mozzarella cheese
salt & pepper to taste

For serving:
Avocados 
Limes
Cilantro

Directions:
1. Preheat oven to 425 F
2. Brown ground beef in skillet with onions, garlic, and bell peppers. 
3. Add all spices and continue to stir until no longer pink. Drain fat if desired. 
4. Push meat to side  of pan and add rice to the open side of the skillet. 
5. Stir rice, toasting for 1-2 minutes.
6. Mix everything together. 
7. Add tomato paste and 2 cups of water, stirring well and bringing to boil.
8. Top with bay leaf. 
9. Reduce heat to low, cover, and simmer for about 10-15 minutes. 
10. Remove the lid and bay leaf and turn off the heat. 
11. Stir in the black beans. 
12. Top with cheese and bake in oven for about 10 minutes or until golden. 
13. Top with desired toppings and enjoy!

The Best Enchiladas

I used to not really like enchiladas, until I found the Siete Enchilada Sauce. It is truly the best, plus it is seed oil free.  It can be found at most grocery stores. I also use the Siete Almond Flour shells for this recipe. This recipe is super simple and makes great leftovers!

Ingredients:

1 lb ground beef
1  jar enchilada sauce
1-2 cups shredded cheese of choice

Directions:

1.  Brown ground beef. Drain. 
2. Add half of the enchilada sauce and half of the cheese. 
3. Stir over low heat until combined. 
4. Add a spoonful of the beef mixture to a shell , roll, and place into baking dish seam side down.
5. Continue until all of the beef is used. 
6. Pour remaining enchilada sauce over the tops of the shells to fill the casserole  dish. 
7. Sprinkle remaining cheese on top. 
8. Bake at 425 for about 10 minutes or until top is browned and bubbly.

ZCR Pot Roast

A spin on the classic Mississippi Pot Roast. This recipe is packed with protein & nutrients, and perfect for leftovers!



​Ingredients:
1 chuck roast
1 stick butter (Kerrygold Garlic Herb is our secret ingredient!)
1 cup chopped carrots
1 cup chopped celery
1 diced onion 
1 diced russet potato
1 packet Aus Jus gravy mix 
1 heaping TBSP minced garlic 
Salt & pepper to taste
Optional- 1 jar pepperoncinis  

Directions:
1. Place chuck roast on bottom of crock pot
2. Add all ingredients on top
3. Cook for 8 hours on low

Seared Filet With Whipped Sweet potato

This is one to wow someone with. 

Ingredients:
2 beef filets
2 sweet potatoes 
1 tsp garlic powder
1 tsp salt
1/2 tsp  black pepper 
1 TBSP beef tallow 
1 TBSP butter 

For chimichurri:
1 bunch parsley, chopped
1  1/2 tsp oregano 
2/3 cup  extra virgin olive oil 
1 heaping TBSP minced garlic
1 tsp salt 
1/2 tsp black pepper 
3 TBSP red wine vinegar

Directions:

1. Preheat oven to 450. 
2. Bake sweet potatoes for about an hour, or until soft. Set aside to cool.
3. Season filets with garlic powder, salt, and pepper. 
4.  Add beef tallow to cast iron pan and heat to medium-high. 
5. Sear steaks for about 2-3 min each side, depending on thickness. 
6. Reduce heat to medium-low and cook for an additional 3-5 minutes each side for medium  rare. 
7. Let steaks sit. 
8. While steaks are resting, scrape the sweet potatoes into a bowl and add the butter. 
9. Use a hand held mixer to whip sweet potatoes until fluffy and lumps are gone. 
10. Add all chimichurri ingredients  to a blender or food processor and blend until  finely minced. 
11. Slice the filets with the grain into bite sized pieces. 
12. Add a large spoonful of sweet potatoes to the middle of a dinner plate and spread into a circle. 
13. Top sweet potatoes with several slices of steak. 
14. Drizzle with chimichurri  and serve!

Crockpot lasagna Soup

Here's an easy, cold weather crockpot recipe  everyone will love!

Ingredients:


1 lb ground beef
1 jar marinara sauce
1 can diced tomatoes
1 diced onion
1 diced red bell pepper
1 tbsp Italian seasoning
Salt to taste
Heaping tbsp minced garlic
4 cups chicken broth
1 box lasagna noodles

Directions: 

1. Lightly brown ground beef in pan
2. Add everything to the crockpot except the noodles
3. Cook on high for 4 hours
4. Add the noodles for the last 30 min (we did half the box)
5. Top with cheese of choice and enjoy!

Air Fryer Beef TAQUITOS

Ingredients: 

1 lb ground beef (this made 6 taquitos)
1/2 chopped onion
1 t garlic powder
1 t onion powder
1 t salt
1/2 t black pepper
1 t chili powder
1 t paprika
1 t cumin
3/4 cup beef broth
Tortilla shells of choice 
1 tbsp minced garlic
Cooking spray of choice

Directions:

1. Brown ground beef in large pan
2. Add onion when beef is about halfway cooked
3. Add all seasonings, minced garlic, and beef broth
4. When beef is no longer pink,  spoon 2-3 tbsp of beef mixture into tortilla shells and roll into a taquito ( we love Siete almond flour shells!)
5. Place seam side down in the air fryer. Spray liberally with cooking oil (we use avocado oil).
6. Cook at 400 degrees for 10 min.

National Hamburger Day

May 28th is National Hamburger Day y'all!  So fire up the grill and throw some delicious, lean, healthy protein on the grill. 

I've been thinking back over the past year. At no other time has health been more prevalent  and central in our lives.  However, in America we remain at an alarming level of 2/3 of the population being obese or overweight. And those health problems became magnified during the covid-19 pandemic. 

Most covid deaths had preexisting conditions, comorbidities, and/or were overweight.  Yet it seemed no one ever looked at the root problem of this.

We were told to quarantine, stay inside, wear a mask, wash our hands and don't see each other.  Yet  no one said  to go lift some weights, run, get on a bike, or do some pilates. Doctors didn't tell us to look at our diets and cut back on processed foods and sugar and increase protein and vegetable intake.  Vitamin C and zinc weren't recommended. 

So maybe it's up to us to make sure we are exercising , eating rights, and taking our vitamins.  

It's proven that a high protein diet, supplemented with carbs and healthy fats, is essential to building strong, lean bodies. 

With  10  essential nutrients, like iron, zinc, and B12, beef is an excellent choice when it comes to wholesome protein options.  A 3 oz serving also contains 25 grams of protein, making it  easy to incorporate beef into a healthy diet. Beef also contains amino acids, which are great for replenishing and building muscle. 

So this beef month, let's celebrate by moving our bodies and eating healthy, delicious protein- go beef!

Taco Soup

Here's another keeper for your crock pot repertoire. Hearty, flavorful, and packed with protein, think a soupier version of chili with the taco flavor we all love! Of course, you could also cook this on the stove top in a large dutch oven. 

Ingredients:
1 package ground beef
1 packet taco seasoning
1 T cumin
1 T paprika 
1 tsp chili powder
2 tsp salt 
1 can corn 
1 can kidney beans 
1 can black beans
1 can diced tomatoes 
1 cup water
​

Directions:
  1. In large pan, brown ground beef until it just starts to turn pink. Add to crockpot (it will cook the rest of the way in the crockpot). 
  2. Add remaining ingredients to crock pot on top of ground beef. 
  3. Cook on low for 6-8 hours and serve with your favorite taco toppings.

Happy Beef Month

Happy Beef Month y'all!  As I was driving around our ranch yesterday, I couldn't help but feel so grateful for this beautiful life we get to live.  This is my favorite time of year- it's not too hot yet, the grass is green and thick, the cows are slicking up, the skies are clear and there are babies running around everywhere, kicking and playing and enjoying the sunshine. The air is fresh with excitement and growth and there is  a special  enthusiasm this year coming out of such a rough winter. 

There are so many benefits these ranchlands provide .  As I drove around  I thought about how special it is to be able to feed the world. I thought about how our 700 acres protects these lands from developers and turning it into concrete. I thought about all the animals besides just the cattle that call this place home- countless whitetail deer, turkeys, birds, and other species that would be pushed out and/or killed if this became a neighborhood or shopping mall. 

The grazing cattle help aerate and fertilize the soil, prevent fires, and ultimately turn unusable forages and feedstuffs into   a high quality protein for us to enjoy. That's not to mention all the byproducts cattle provide- everything from glue, to footballs, to marshmallows and gum.

So this beef month, let's be sure to be extra grateful as ranchers for this amazing life we get to live. And if you are a consumer with any questions, don't hesitate to reach out to a local farmer or rancher. We would love to share our story with you.

Garlic and red wine braised short ribs

This may be my new favorite meal ever. They seem intimidating , but I promise they are not hard! I've made these twice now and they were falling off the bone amazing both times, so this recipe is definitely a keeper!

Ingredients:
-1 pack beef short ribs
​-3 TBS oregano
-3 TBS parsley
-1 TBS salt
-2 tsp pepper
-3 TBS garlic powder
-1 diced onion
-1 cup diced carrots
-1 heaping TBS tomato paste
-1-2 cups beef broth
-1/4 c red wine
-1 TBS minced garlic
-2 TBS olive oil

​Directions:
  • Preheat oven to 275.
  • Heavily coat short ribs on both sides in salt, pepper, oregano, parsley, and garlic powder (feel free to use any other herbs you like!)
  • In a large dutch oven, heat 1 T olive oil.
  • On medium high heat, sear both sides of the ribs for 3-5 min. Place seared ribs in a large baking dish.
  • In the same dutch oven, add remaining olive oil and minced garlic. Sauté garlic for about 2 min.
  • Add onions and carrots and stir for about 8 min or until soft.
  • Add 1 cup beef stock, tomato paste, and red wine. Stir for about 5 min or until sauce begins to thicken.
  • Pour sauce over ribs to cover. Add more beef stock if needed to cover ribs.
  • Cover in foil and bake for 3-4 hours.
