![]() Ingredients: 1-2 lbs ground beef 1 can drained black beans 1 cup jasmine rice 1 small diced onion 1 diced bell pepper 3 tbsp minced garlic 2 tsp oregano 2 tsp cumin 1/2 tsp allspice 1 tsp cayenne pepper 1/4 cup tomato paste 2 cups water 1 bay leaf 1 cup mozzarella cheese salt & pepper to taste For serving: Avocados Limes Cilantro Directions: 1. Preheat oven to 425 F 2. Brown ground beef in skillet with onions, garlic, and bell peppers. 3. Add all spices and continue to stir until no longer pink. Drain fat if desired. 4. Push meat to side of pan and add rice to the open side of the skillet. 5. Stir rice, toasting for 1-2 minutes. 6. Mix everything together. 7. Add tomato paste and 2 cups of water, stirring well and bringing to boil. 8. Top with bay leaf. 9. Reduce heat to low, cover, and simmer for about 10-15 minutes. 10. Remove the lid and bay leaf and turn off the heat. 11. Stir in the black beans. 12. Top with cheese and bake in oven for about 10 minutes or until golden. 13. Top with desired toppings and enjoy!

I used to not really like enchiladas, until I found the Siete Enchilada Sauce. It is truly the best, plus it is seed oil free. It can be found at most grocery stores. I also use the Siete Almond Flour shells for this recipe. This recipe is super simple and makes great leftovers!
Ingredients: 1 lb ground beef 1 jar enchilada sauce 1-2 cups shredded cheese of choice Directions: 1. Brown ground beef. Drain. 2. Add half of the enchilada sauce and half of the cheese. 3. Stir over low heat until combined. 4. Add a spoonful of the beef mixture to a shell , roll, and place into baking dish seam side down. 5. Continue until all of the beef is used. 6. Pour remaining enchilada sauce over the tops of the shells to fill the casserole dish. 7. Sprinkle remaining cheese on top. 8. Ingredients: 2 beef filets 2 sweet potatoes 1 tsp garlic powder 1 tsp salt 1/2 tsp black pepper 1 TBSP beef tallow 1 TBSP butter For chimichurri: 1 bunch parsley, chopped 1 1/2 tsp oregano 2/3 cup extra virgin olive oil 1 heaping TBSP minced garlic 1 tsp salt 1/2 tsp black pepper 3 TBSP red wine vinegar Directions: 1. Preheat oven to 450. 2. Bake sweet potatoes for about an hour, or until soft. Set aside to cool. 3. Season filets with garlic powder, salt, and pepper. 4. Add beef tallow to cast iron pan and heat to medium-high. 5. Sear steaks for about 2-3 min each side, depending on thickness. 6. Reduce heat to medium-low and cook for an additional 3-5 minutes each side for medium rare. 7. Let steaks sit. 8. While steaks are resting, scrape the sweet potatoes into a bowl and add the butter. 9. Use a hand held mixer to whip sweet potatoes until fluffy and lumps are gone. 10. Add all chimichurri ingredients to a blender or food processor and blend until finely minced. 11. Slice the filets with the grain into bite sized pieces. 12. Add a large spoonful of sweet potatoes to the middle of a dinner plate and spread into a circle. 13. Top sweet potatoes with several slices of steak. 14. Drizzle with chimichurri and serve! Lightly brown ground beef in pan 2. Add everything to the crockpot except the noodles 3. Cook on high for 4 hours 4. Add the noodles for the last 30 min (we did half the box) 5. Brown ground beef in large pan 2. Add onion when beef is about halfway cooked 3. Add all seasonings, minced garlic, and beef broth 4. When beef is no longer pink, spoon 2-3 tbsp of beef mixture into tortilla shells and roll into a taquito ( we love Siete almond flour shells!) 5. Place seam side down in the air fryer. Spray liberally with cooking oil (we use avocado oil). 6. Cook at 400 degrees for 10 min. Enjoy! Here's another keeper for your crock pot repertoire. Hearty, flavorful, and packed with protein, think a soupier version of chili with the taco flavor we all love! Of course, you could also cook this on the stove top in a large dutch oven.
